Tuscan Chicken Pasta Salad
Delicious as a main meal, or a side dish.
Serves 6
Time 30 mins
Ingredients:
500g pasta spirals
1 chicken breast, cooked and chopped into bite sized pieces
1 jar artichoke hearts, roughly chopped
¼ cup sun-dried tomatoes, roughly chopped
¼ cup black olives, pitted and halved
100g baby spinach
¼ cup toasted pine nuts
Method:
1. Cook pasta according to packet instructions. Drain and place in a serving bowl to cool slightly.
2. Meanwhile, mix together oil from artichoke, tomato and olive jars to make about ½ cup of dressing.
3. Toss the dressing through the pasta. Add the artichokes, tomatoes, olives, chicken, baby spinach and pine nuts.
4. Mix pasta salad until all ingredients are well combined.
NOTE: Toast pine nuts by cooking in a dry fry pan, over medium heat for 1-2 minutes, until lightly golden.
