Swagman’s Roll
A hearty family meal, all wrapped up!
Ingredients
4 sheets puff pastry, defrosted
500g beef mince
1 carrot, grated
1 zucchini, grated
1 capsicum, finely chopped
1 potato, grated
1 floret broccoli, finely chopped
200g mushrooms, finely chopped
1 onion, grated
2 cloves garlic, crushed
4 tbl worcestershire sauce
4 tbl barbeque sauce
4 tbl tomato sauce
1 tbl sweet chilli sauce
Method
1. Preheat oven to 180C.
2. Add oil to a large frypan or wok and fry onion and garlic until soft.
3. Add mince and stir until browned.
4. Add vegetables and stir until tender.
5. Stir through sauces.
6. Allow to cool, then distribute into the centre of each puff pastry sheet. (If you put the hot mixture onto the pastry, to bottom will go soggy, rather than crispy.)
7. Bring two sides of the puff pastry towards the centre and fold over to seal. Fold over the remaining two ends and press down to seal.
8. Place onto baking trays and cook 15 to 20 minutes, or until pastry is puffed and golden.
