Lemon Basil Chicken

A delicious taste of Italy.

Serves 4

Ingredients

2 chicken breasts, sliced into fingers
¼ cup plain flour
1 tbl butter
1 tbl olive oil
3 cloves garlic, crushed
½ cup chicken stock
¼ cup lemon juice
½ cup cream
Fresh basil, finely chopped

Method

1.    Place flour on a plate and coat each chicken breast.
2.    Melt butter and oil together in a fry pan.
3.    Add chicken and cook until browned and cooked through.
4.    Remove from pan and set aside in a covered dish to keep warm.
5.    Add garlic to the pan and stir for a few seconds, making sure not to brown.
6.    Pour in stock and juice and simmer for 2-3 minutes.
7.    Add cream and basil and pepper to taste and stir to combine.
8.    Serve chicken with sauce, salad and crusty bread, or mashed potatoes.
