Sugar and Gluten Free Pear Cake

So easy and delicious.
Time 1¼ hours
Ingredients
500g almond meal
6 large eggs
1 tsp baking powder
¾ cup honey
3 soft, ripe pears, core removed and chopped
Method
1. Preheat oven to 170°C.
2. Place all ingredients into a blender and blend 3 minutes, or until well mixed.
3. Pour into a lined, greased cake tin and bake 1 hour.
4. Leave to cool slightly in tin, then turn onto a wire rack to cool completely.




I’m following the Specific Carbohydrate Diet (SCD)and this recipe is tailor–made for my diet! (Except for the baking powder — we use bicarb of soda and I’m sure it should work just fine in this recipe.) But for the rest, our mainstay is almond meal and honey is our sweetener. And of course, any addition of fruit is fabulous. I’m going to rush out now to buy the ingredients and make this cake. Please send more of same, whoever you are, who supplied this recipe!
