Impossible Pie

This is the easiest pie to make – impossible to ruin! You tip it all into the pie dish at once, and forms its own base, custard filling and crusty topping.
Serves 6
Time 1¼ hours
Ingredients
1 tbl butter, melted
4 eggs
½ cup plain flour
2 cups milk
1 cup desiccated coconut
1 cup castor sugar
2 tsp vanilla essence
Method
1. Preheat oven to 170°C.
2. Place all ingredients in a large bowl and beat for 1 minute.
3. Pour into a greased pie dish and bake for 1 hour.
4. Serve warm or cool with cream or ice cream, if desired.
